Peas, Beans & Shrimp — Dinner for One







1/2  lg.  Vidalia onion - cut and slice
3/4  c    frozen edamames (soy beans)
15         frozen shrimp (41-60 per # size)
1/8  t     sea salt
1/2  T± garlic pepper
1+   T   lemon thyme leaves - crush
2/3  c    blackeyed peas - drain and rinse









Saute' onions and edamames in 1T butter, covered, on low until onions are translucent.  Add clean, thawed shrimp, salt, pepper and thyme.  Saute a few minutes, add blackeyed peas and heat on low a couple minutes longer.

I've never met a shrimp I didn't like, unless it was a greasy, fried, breaded one.  Beans are an excellent source of fiber and protein.  We should include several servings a day for optimal health. . .Lin
