SunDried Tomato Pesto Chcken

1-1/2#  boneless chicken breast meat
1+ T      oil from the pesto jar
2   T      pesto — (see recipe below)


Wash, dry and cut chicken into chunks.  Put in a non-stick pan and add pesto oil and pesto.


Cook and stir on high a few minutes.  Cover and turn heat to low for 10 minutes.  Uncover, turn up heat, cook and stir until liquid caramelizes and coats the chicken.  Serves 2-4. . .Lin
