Mexican Beef-Shrimp "Paella"

Paella is a loose term for a free-form sort of recipe.  Basically it's a Spanish creation of sausage, meat, seafood, vegetables, spices, and rice.  This is my convoluted Mexican version.  It started about a week ago with a beef roast.  Then I  made the leftovers into a Mexican Beef Rice-Pepper concoction for friends this past weekend.  Then, today, I saw a green pepper that was starting to shrivel in the 'fridge and...I had a taste for shrimp.  :-D

Soooo, I used about 1c of a chorizo sausage sauce, I bought from our local - authentic - Mexican restaurant, added some water, a red onion and that green pepper.  Sauteed those a short time, added some of the Mexican Beef Rice-Pepper thing (in the bowl on the right).  Simmered that about 5 minutes then added 20 shrimp and saute'-steamed a bit longer.

It was spicy, but mellowed perfectly with a dab of sour cream.

Sorry this isn't more exact, but I'm hoping it might inspire your creativity with leftovers. . .Lin
