Tomato-Cucumber Salad — Potato Medley — Corn Flour Crusted Chicken



Scrub, rough peel and slice 2 long pickling cucumbers and 2 tomatoes.  Toss together in a bowl with some snipped basil, sea salt and fresh ground pepper.  Salad dressing optional.





1 peeled sliced-chopped sweet potato, a few red, purple and Yukon Gold potatoes and carrots - scrubbed and chunked.  Simmer about 10 minutes in salted water.  Drain and dry.  Saute'-brown another 10 minutes with a medium sliced-chopped onion in a little extra virgin olive oil-butter mix.  Sprinkle with Rosemary Spice.



Wash chicken breast tenderloins.  Roll in salt and peppered corn flour (not cornmeal).  Fry over high heat in butter with a little extra virgin olive oil.  When crispy and chicken is done, put pieces on brown paper to absorb grease.  This is really good with some Plum Conserve or Peach Salsa (recipes posted here previously). . .Lin
