There's a story behind this odd Halloweeny looking combination. Once upon a time, when I was a HUGE egg consumer, I woke up really craving an omelette. I use a LOT of vegetables in everything I cook, and omelets are no exception. It was grocery shopping day however, and all I had in my crisper were a couple pieces of celery and a very tired carrot. I decided to give that a try and was totally shocked! Awesome!
These days I've seriously cut back on eggs, but still just love them. Especially the fresh brown ones from local farms, which I'm currently out of.
First, chop the carrot and celery into the pan with the butter. Quickly stir-fry, add one egg, stir, heat just until the egg is cooked. Shown here with a piece of toasted Hodag Bread. If you haven't tried this local, grainy wonder, get yourself down to Golden Harvest and buy a loaf. Ohhhh, such loverly bread! With a big mug of hot lemon water. . .ahhh, really good!. . .Lin
