2-3# mixed potatoes
1/2 bunch of celery
1 med. onion

4oz. sharp cheddar cheese
4oz. grated Parmesan cheese
1/2c half and half or heavy cream
salt and lots of fresh ground pepper
Scrub well and cube potatoes into a big pot of salted water to keep from oxidizing (browning). Chop onion and celery into a large casserole dish then add the grated cheddar, sprinkle on the fresh grated Parmesan and pour the cream or half and half over the cheese vegetable mix. Add a sprinkle of salt and ground pepper. Stir. Then drain the potatoes and combine them with everything in the baking dish. Bake in a 325-350° oven until potatoes are done the way you like them. Check with a fork or knife from time to time. I love potatoes about half cooked, so this didn't take long at all. We had this with a Venison Meatloaf - oh so good!
Another variation of this —
13oz. pack of Turkey Kielbasa - sliced or cubed
1# of fresh green beans - sliced diagonally
