Tonight I'm alone, so I decided to have an 'inspiration' dinner. I do this, when I'd like to try create my version of something, to get ideas for a recipe. This is a frozen Maryland Crab Cake.
The flavor was great, but texture was mushy. I already have ideas on how to make this better: more flavor, crunchier and crispy on the outside. I cooked this crab cake fast, in the same pan with 2 carrots, a piece of a purple onion and a red pepper, all in a little olive oil. It was a good dinner, and only about 275 calories total :o)
