Bacon & Onion Stirred Eggs

This is definitely a high fat-cholesterol breakfast.  My granddaughter found some wonderful bacon at the grocery store where she works.  Trig's Smokehouse is a local thing and they sell the best bacon I've ever tasted!  All bacn, other than Hillshire Farms brand, upsets my stomach, so this was a nice surprise.  We cooked up the entire package of this a couple days ago so what I used here was leftover from that.

4-6  slices previously cooked bacon - chopped
1/2  med. onion - chopped
3     fresh farm eggs
1/2 c  grated cheese - optional

Saute' bacon and onion, covered, slowly to bring out the juices and fat from the bacon.  When onion is translucent, crack in eggs and gently stir - just enough to break up yokes, inner thick whites and combine with bacon and onion.  Add some fresh ground pepper and cook slowly until mixture can be flipped.  Top with cheese, cover and remove from heat for a few minutes.  2 servings. . .Lin
