We had a beautiful beef prime rib roast yesterday and baked 4 potatoes instead of 2. Since I may (or not) have made 'twice baked' potatoes a couple times in my life, many years ago, this sounded like something fun to concoct.
2 previously baked potatoes
1/2 med onion - finely chopped
3oz sharp cheddar - grated
1/4c au jus - from the roast
1/4c light sour cream
2T softened butter
1/4t Season-All (Morton's) seasoning salt
fresh ground pepper
Warm potatoes in the microwave about a minute or just enough to create moisture under the skin. Peel carefully leaving as much browning on the potato as possible. See first photo. Chop and finely dice (or mash) the potatoes and combine with remaining ingredients. Put in a baking dish or their own individual loaf pans. Broil on high for 5-10 minutes minutes until crispy. Turn heat down to 325° for another 15-20 minutes.
Serve with leftover meat and a salad. This would also be good for breakfast. Cut in small pieces like this, it was similar to hash browns. . .Lin
