Mediterranean Vegetable - (gluten-free) - Corn Flour Quiche'


1/2 c corn flour
1/2 t  baking powder
1/4 t  baking soda
1/4 t  salt
fresh ground pepper


2/3 c  milk
3 med  eggs
2c  frozen Mediterranean vegetables
1/3 lg onion

2 oz  sharp cheddar - grated


Combine dry ingredients in a small bowl.  In larger bowl, whisk eggs and milk together.  Add the flour mixture to the milk and eggs, whisking until blended.  Stir in the chopped vegetables and pour all into a large buttered glass pie pan.  Top with grated cheese.  Bake at 375°-400° about 50 minutes until quiche' has 'set up', the top is bubbly and lightly browned and a knife inserted, half way between the center and the edge, comes out clean. . .Lin
