Here we go again! This is similar to yesterday's breakfast with beans and avocado added. I keep posting these sort of meals in hopes it'll be an encouragement to think outside the traditional-meal box. Breakfast doesn't have to be Cheerios, bananas, orange juice and milk. Lunch doesn't have to be a peanut butter sandwich. Try leftovers for breakfast. Take some beef roast and potatoes from a previous dinner, chop them up, add onion and make a breakfast hash. Add vegetables and serve! In my opinion - vegetables should make up half to two thirds of the plate for each of our meals.
1/2 can light red kidney beans
2 cups leftover vegetables
1 med egg
1/2 avocado
Heat beans and vegetables in a non-stick pan. Make a space in the middle, crack in an egg and cook the way you like it. Serve in a big bowl topped with chopped avocado, salt and pepper. . .Lin
