1 med onion - chopped
4 sm red mini-peppers
8 oz corn pasta
1 med egg
-1c half and half or milk
12oz mixed grated cheese - Swiss,
Sharp Cheddar, Velveeta and Fontina
Brown the chicken pieces in 1-2T butter with a little of the onion. When the chicken is about half done, add the remaining onion and pepper slices. Saute' another 5-10 minutes. Cook the pasta until almost done, drain quickly, but do not rinse. Put into a baking dish and add the cheese. Stir to blend. Crack the egg into a 1c measuring cup and add the half and half to the 1c mark. Stir until blended, pour over the pasta-cheese mixture. Stir in the chicken and vegetables, combine and bake about 20 minutes at 375°. . .Lin
