Lots of people have just the opposite preference and love 'breakfast for dinner' - pancakes, waffles, etc. Not me! This was a quick and easy way to finish up leftovers.
I started with a small sweet onion, sauteed briefly in a teaspoon of butter, added 1/2 can of dark red kidney beans then the leftover chicken and almond rice pilaf. It was SO good! . . . Lin
