Boneless Pork Ribs

This was just a fun dinner.  The Ranch Potatoes are not my recipe.  If you're not a fan of ranch flavor you could experiment with this substituting an Italian dressing seasoning packet or even taco seasonings.  Be creative and follow your preferences.

1.75#  boneless pork ribs
2     onions - chopped
2T   seedy brown mustard
1T   real Maple syrup (or honey)
1c   warm water

Using 1-2T butter in a non-stick pan, saute' about 1/3c of the onion (finely chopped) for a few minutes.  Add the ribs and turn up the heat to brown the meat on both sides.  Mix mustard and Maple syrup with 1c water.  Pour over the meat to glaze and use as a basting liquid.  Simmer fast coating the meat on both sides, cover the pan and turn down the heat to a low simmer.  Cook this way, turning several times, for a couple hours.  Add the remaining chopped onion and a little barbecue sauce, turn to coat meat and onion chunks.  Finish cooking, covered for another 15 minutes or so adding a little more water if needed. . .Lin




Ranch Potatoes

2#       small potatoes - scrub
            and cut into quarters
1/4c    vegetable oil
1 pkg. Ranch Dressing mix







Put potatoes in a gallon size Ziplock bag.  Add oil, puff the bag with air, seal and toss.  Sprinkle on the dry Ranch Dressing mix, add air to the bag, toss again.  When potatoes are well coated, pour them out of the bag onto a large baking sheet with edges.  Bake at 450° 30-35 minutes.
