Olive Chicken Stroganoff



1 c   dry pasta penne
1 lg  chicken breast
1 lg  elephant garlic clove
½    med onion
½ c  sour cream
¼ c  red olives - finely chopped
       (sorry-not shown)





Cook pasta until al dente - drain. Meanwhile cut chicken into small pieces and saute', covered, about 10 minutes in 2T Lemon Oil Dressing (recipe posted here earlier). Add chopped garlic and onion. Simmer and cook another 7 minutes or so.


Stir in 2 additional tablespoons of Lemon Oil Dressing, sour cream, pasta and olives, heat through and serve. This turned out SO good! . .Lin
