Curried Black Bean - Chicken Salad


8oz chicken breast meat
3  stalks celery (+ tops)
1  carrot
1  med. onion – or equivalent
1T curry powder or cumin
1T balsamic vinegar
1 lime – zest and half the juice
   salt and pepper
~ optional ½ finely chopped yellow, red or green pepper
¾c plain Greek yogurt


Cut the chicken into small pieces and saute' in 1T butter over med-high heat, stirring and browning about 10 minutes. Add chopped celery, carrot, onion, curry powder, vinegar, lime zest and juice, and ¼c water to the chicken. Simmer and stir 3-5 minutes.

Put beans in a colander, rinse and drain well. Put the hot chicken and vegetable mixture in a medium bowl with celery tops and let cool 5 minutes.. Add yogurt, salt and pepper, beans, combine and serve. Sprinkle with a handful of raisins for a really nice sweetness that balances the flavors. . .Lin
