Brown Rice Vegetable Soup (and Pilaf)



I wasn't feeling very well yesterday and made this for dinner. What started as soup the first day, became pilaf the next. Rice will do that! All the liquid had absorbed within 24 hours.  As pilaf, it goes well with fish or chicken.

1c brown rice
1-2T butter
1 med onion
2 med carrots
2 stalks celery
2-3T Better Than Bullion

Saute' rice in butter with a little of the onion, finely chopped. After about 5 minutes all the rest of the finely chopped vegetables. Stir and saute' 5-10 minutes. When the rice browns a bit and the vegetables start cooking, add 1c water and turn up the heat to high. Continue to stir and cook until the water begins to evaporate. Add 5 more cups of water and some Better Than Bullion flavoring. Cook a total of about an hour. Check rice for doneness and the broth for flavor. Add more flavoring if needed.
