½ ripe pineapple
1-2 kiwis
8-10 lg frozen strawberries
½ lime-juice
1 lemon-zest
1-2T raw sugar
Cut the pineapple in
half, using the bottom half. Cut away the outer covering and cut the
pineapple in quarters vertically. Remove the center core and
slice-dice the fruit into a pretty bowl, into 'tidbits'. Peel,
quarter and slice the kiwi(s) and combine with pineapple chunks. Put
the remaining ingredients in a food processor - mini-prep processors
work very well. Pour the strawberry mixture over the fruit in the
bowl. You can also add ½c dried fruit - raisins, craisins or
chopped prunes for a little more depth of flavor, color and texture.
