RIBS!!! - Fried Corn and Potatoes

2-3# boneless beef ribs
2-4T your favorite Balsamic vinegar
2-4T extra virgin olive oil

Wash, dry and trim excess fat from the ribs. Put into a baking pan, then pour vinegar and oil over the ribs. Pepper both sides and turn them several times to make sure all the meat is coated well. Let marinate an hour or so. Put into a 300° oven, cover and bake for 20 minutes. Reduce heat to 225° and continue cooking another 40 minutes. Finish cooking on the grill until done the way you like. Brush with marinating liquid if you want or barbeque sauce at the very end. . .Lin

3-4 cobs of corn
1 med. red onion
4± Yukon Gold potatoes
1-2T butter
1-2T Balsamic vinegar

Cut kernels off the cobs into a big cooking pan. Slice the onions into the pan. Scrub and cube the potatoes and add them also. Salt and pepper then fry fast with the butter and vinegar, stirring ofte. Once everything is nicely browned, add more butter, vinegar and/or water if needed then reduce heat, cover and continue to cook until everything is done the way you like it. . .Lin
