This recipe just couldn't
make up its mind about what it wanted to be!
1 can refried beans or
make your own
1 small-medium onion -
chopped
shredded cheese
1 perfect avocado -
chopped
1 perfect pink tomato -
chopped
2T± sour cream
1t± your favorite hot
sauce
white or yellow corn
tortillas
~ options:
sliced black or red olives
~ fresh corn cut off the
cob, pan roasted in a little butter
~ slice-chopped sweet
peppers, cooked just a bit, with the corn
~ leftover cooked beef or
chicken
Combine beans, onion -
and other optional ingredients - in a pan and heat. Meanwhile, in a
small bowl, gently mix avocado, tomato, sour cream and hot sauce.
Stir and continue heating the bean mixture while warming tortillas on
a cast iron griddle. Assemble - a spoonful of the beans-etc. Then
some shredded cheese over a warm tortilla. Fold, then top with the
chunky tomato-avocado sauce and serve.
I made these with just the basic ingredients, no options. Mmm, they were quick, fun to make and tasted really good! . . .Lin
