Spicy Black Beans, Corn and Vegetables




3 ears of corn - cooked or raw
1/2 lg. Sweet onion - chopped
1/2 sm. red onion - chopped
1-1/2 - 2c chopped celery and tops
1 can black beans - drained and rinsed


2T lime hot sauce
2T good Balsamic vinear
1T Maple syrup
1/2t Pampered Chef's Citrus Basil Rub

Combine all the above, mix and chill for a couple hours. Serve as a side dish, a dip or a salad on a bed of lettuce leaves. . .Lin
