5-Ingredient Salad with Beans


Today a big salad sounded great. A handful of the kale, onion, cabbage, lettuce mix, ½ a can of beans for some great soluble fiber, kohlrabi, white and green pickling cucumbers, half an avocado and a tomato. The avocado is also surprisingly high in fiber.  Dressing was Fig Balsamic vinegar and extra virgin olive oil.

Eating cleaner, closer to the way food grows in nature, is a great goal. It helps with weight loss, blood pressure, stabilizing blood-glucose levels, mood fluctuations, headaches, etc.  I'm excited to see the changes. . .Lin
