Vegetable Quiche'




Chop the vegetables shown into a buttered 9” glass pie pan.  






Mix 3-5 eggs with the following:

2/3 – 3/4c Half & Half – then whisk in:
2T self-rising flour or regular flour with a
pinch of: salt, baking soda, baking powder


When thoroughly combined, pour over vegetables. The flour mixes with the egg mixture to create just a hint of a crust. If the liquid doesn't cover the vegetables, put a square of aluminum foil over the top. Bake at 325-350° 30-40 minutes. Slice and serve. . .Lin
