Sweet and Spicy Chicken Curry


leftover chicken pieces or just meat
leftover roasted vegetables
1c quartered pitted prunes
½c± craisins
1 can Aroy-D red curry sauce
½ can coconut milk




Combine everything but the coconut milk. Simmer 5-10 minutes, just to heat. Stir in coconut milk and heat again. Serve as is, over rice, or rice noodles. This recipe is, as usual, a concoction of mine but there are many good curry and Thai cookbooks available . .Lin
