Vegetable Marinara (Italian Red Sauce)





1lg grated carrot
2lg grated elephant garlic cloves
1T butter



Saute' these together, stirring all the while, for about 2 minutes. Then add about a ½c water and the juice from 1 can of diced tomatoes. Continue to simmer 5 minutes. Then add:



1-14.5oz. can diced, or petite diced, tomatoes
(plain or seasoned / flavored)
1-8oz. can tomato sauce
½t sugar
½t Rosemary Seasoning or Italian Seasoning
(if using plain tomatoes)


Stir this and simmer until the liquid reduces, 10-15 minutes. Serve over 'chunky' pasta: frozen or homemade ravioli, rigatoni, tortellini, etc. Serves 2-3. . .Lin
