Chopped Salad

Some people will take a regular tossed salad, cross-cut it a few times with sharp knives and viola', their version of 'Chopped Salad!' I think of it in a more calculated way, liking, instead, to begin with chopped ingredients – ½” - ¾” cubes. Be creative. . .just pull fresh ingredients off your window sill and out of the 'fridge.

For salad shown, cube-chop the following:

¼ of a small, heavy, head of cabbage
½ sm.-med. Onion
2 mini-English cucumbers
4 large, heavy, fresh mushrooms
1 med. tomato
½ ripe-firm avocado
2 oz. cheese cubes

This particular recipe will make 4 small or 2 large salads. Top with any dressing you like. . .Lin
