Garbanzo-Green Bean Salad


12oz. fresh or frozen baby green beans
1 med. sweet onion, chopped or sliced
¼c roasted red pepper, chopped
1 can drained-rinsed garbanzo beans


Cook the green beans in a little water for about 5 minutes until tender but still bright green. Combine the other ingredients with the drained beans in a medium size glass bowl.

¼c   sugar
1/3c light vegetable oil
2/3c white vinegar
fresh ground pepper

Combine these ingredients in a small pan. Bring to a boil, stirring to dissolve sugar. Pour over the vegetables in the bowl. Stir several times an hour to allow all the vegetables to marinate. Chill overnight to blend all the flavors. Serve as a main course salad, or a side dish. . .Lin
