1½# celery
2 med. onions
3 med. potatoes
¼-½c pimentos or
~ roasted red pepper
1-2t Rosemary Seasonings
2-4T vegetable or chicken
soup base
12oz. soft Swiss or white American cheese –
cubed or sliced
Finely chop all the
vegetables into a 5 quart pot.
Add 2T butter, 6-8c water and seasonings.

Simmer for 20-30 minutes until vegetables are soft. Check the flavors and make necessary adjustments. Add the cheese, stirring until it's melted. Serve immediately. When reheating, be sure soup doesn't boil, just reheat. . .Lin
