Tilapia and Vegetables


3-4 extra large Brussels sprouts
1-2 extra large carrots
1 large sweet onion
Tilapia filets

In a small covered pan, steam-saute' quartered Brussels sprouts, sliced carrots and halved-sliced onion in a little water for about 8 minutes. Meanwhile, in a covered non-stick pan, heat a tablespoon of butter and some balsamic vinegar. Add the tilapia and let the filets sizzle-saute' over medium heat, covered, a few minutes. Flip and cook the other side. Drain vegetables then add a tablespoon of butter, sea salt and fresh ground pepper. Mix and serve. . .Lin
