Craisin Coleslaw


½ sm. head of green cabbage
¼ sm. head of red cabbage
½ sm Vidalia onion
1 carrot – shredded
½ c craisins

1/3 c non-fat Greek yogurt
1/3 c mayonnaise
fresh ground pepper
2T apple cider vinegar

Thin slice the cabbage and onion into a medium glass bowl. Add carrot and craisins. Combine yogurt, mayonnaise, pepper and vinegar, stirring until smooth. Add enough water to make the dressing pourable. Pour this over the sliced vegetables and toss. Chill an hour or longer. Taste to see if flavors are balanced. If necessary, add a little salt and / or a drizzle of honey or maple syrup. Toss again and serve. . .Lin
