Shrimp Coconut Curry


1 med. onion
2 lg. cloves of elephant garlic
2 carrots
2T solid coconut 'oil'
1c water


1c thawed (frozen) peas
1 lg. cubed, peeled potato
1T dried cilantro
1½t ± good quality curry powder
½ can coconut milk
9-12oz. thawed (frozen-cooked) shrimp with tails



Chop-slice onion, garlic and carrots. Saute' in coconut oil and water 5-10 minutes. Add remaining ingredients and simmer covered another 10 minutes or so. Serve as is, curry soup, or over rice, for a main dish. Makes 2-4 servings. . .Lin
