Craisin-Pear Chicken Salad



½c craisins
½c slivered almonds
1 med. sweet onion
2T red wine or light Balsamic vinegar
fresh ground pepper
Combine the above ingredients in a medium glass bowl. Let stand so craisins rehydrate, about 20 minutes, then add:



1 large can chicken, drained and flaked
2 firm-ripe pears, peeled
mayonnaise – enough to mix and coat lightly
Combine all of these together in the bowl. Serve over Butter Lettuce or Romaine leaves. Garnish with carrots or orange slices. . .Lin
