quinoa
Toast
the almonds in a dry pan for about 5 minutes. Add Quinoa and
continue to toast, shaking pan until the quinoa begins to snap and
pop for another 5 minutes. Pour in 1¼c water, cover and simmer 10
minutes, then add:
3 chopped carrots
1
crown of *broccoli separated into florets
1
lg. chopped clove of elephant garlic
1t
curry powder
1-2T
almond or peanut butter
1T
tamari – soy sauce
1
can drained-rinsed beans

Combine
and simmer, covered, another 10 minutes, adding more water if needed.
Continue to simmer until the quinoa is softened. This can be served
