Easy Potato Salad



5 med. potatoes
3 eggs

Put potatoes and eggs into a 3 quart kettle, cover with cold water. Bring to a boil and simmer about 15 minutes or until a fork inserted into a potato comes out easily. Drain and fill pan with cold water. Meanwhile combine the following ingredients in a medium size bowl.

2/3c sour cream or mayonnaise
¼c honey mustard salad dressing
3 ribs of celery – chopped
5 med. dill pickles – chopped
½ med. onion – chopped

When potatoes and eggs are still barely warm, chop and add those as well. Toss, chill and serve. Shown here with smoked pork ribs. . .Lin
