Black Bean Chicken Chili


½# chorizo sausage
1½# boneless-skinless chicken
1 lg. onion - chopped
3 stalks celery - chopped
2-3 cans petite diced tomatoes
1T sugar
2 cans black beans, drain and rinse
2t good quality cumin
2t good quality chili powder


Chop up the sausage in a big pot with the bite-size chicken chunks. Heat in a little olive oil until it sizzles. Continue to cook on medium heat until the chicken is nicely browned. Add onion and celery, tomatoes, sugar and a little more water. Simmer an hour or so then check flavors. Add seasonings and beans at this point, then simmer another half hour. Serve with crusty Italian bread or corn bread. . .Lin
