Chicken Pot Pie Soup


This soup reminds me of wonderful, homemade chicken pot pie - without the crust.

1# chicken breast
1½c chopped onion
2c chopped celery
5 lg. cloves chopped garlic
2 chopped carrots
1½c potato cubes
1c frozen peas
4-6c chicken stock
salt and pepper
corn starch to thicken



Cut the chicken into small pieces and combine with the next 5 ingredients. Saute in a little butter for 5-10 minutes. Add peas, chicken stock and seasonings. Simmer 45-60 minutes. At the end thicken with a couple tablespoons of cornstarch stirred into a little water. . .Lin
