Sweet and Savory Carrot Souffle'



1# chopped carrots
2 beaten eggs
¼c half and half
¼c sugar
pinch of cayenne pepper
pinch of black pepper
½t pumpkin pie spice
1¼c crushed Cheetos


Simmer the carrots in a little water 12 minutes or so until they mash easily. Do just a rough mash, stir in remaining ingredients then pour into a buttered 8” or 9” pan. Bake at 325° for 30 minutes or until a knife inserted toward the center comes out clean. Sprinkle with sunflower or pumpkin seeds. . .Lin
