Individual Pesto Omelet













1 jumbo egg
1-2T pesto

Mix those two ingredients together and pour into a hot 4½”mini omlet pan that has a little pat of melted butter in it. Cook until the edges are set then lift to allow the liquid egg to get down to the hot pan. When half cooked, flip over or onto another heated pan. Finish cooking and serve with a muffin, fruit or vegetables. Breakfast in just a couple minutes! . . . Lin
