Mirepoix Beans

Mirepoix (MARE'-i-pwa) is a French word for the mixture of chopped carrot, celery and onion. The basis, actually, for much of the savory food we all eat. The addition of black and green beans creates an interesting mixed vegetable side or main dish.


4c mirepoix
1 can black beans
1 can green beans

Saute the mirepoix in a little butter and ½-¾c strong chicken broth, until almost tender, then add the canned, drained and rinsed, beans. Mix together, then heat 10 minutes and it's ready to serve. . .Lin
