Gorgonzola Scramble

Per Person:
1 pat of butter
1-2 green onions
2 jumbo fresh eggs
¼ bunch of Italian parsley
a little gorgonzola crumbles


Put chopped onion in a pan with the butter, cover and let sizzle until the color brightens.  Add beaten eggs and cover again for a minute, lift the cooking egg to allow the liquid egg to contact the pan.  Flip it over, sprinkle with the parsley and cheese.  Move the pan off the heat, cover and let stand a minute or so longer.



I used to think parsley was just a garnish for color, and not meant to be eaten.  Wrong!!  It has a lot of good nutritional qualities, and is called a blood cleanser.  Eat lots of it!  It's also a great thing to add to green smoothies. . .Lin
