Quick Steak



Per Person:
1 8oz. steak
salt and pepper
Tuscan olive oil
1 sm. onion - sliced
4 garlic cloves - sliced
1 sm. - med. sweet potato
aged balsamic vinegar



Cut the partially frozen steak into 1" cubes onto a plate covered with paper towels.  Finish thawing, then put into a regular frying pan (not non-stick).  Season, then drizzle with oil and sear over med.-high heat.  Add garlic and sweet potato that has been scrubbed and chopped, but not peeled.  When about half done, drizzle with the vinegar, cover and remove from the heat.  Let stand for a couple minutes before serving. . .Lin
