Fennel Egg Salad


1 sm.-med. fennel bulb
½ purple onion
5 hard boiled eggs
2 red mini peppers
3-5 T mayonnaise
⅓c medium salsa

Chop the first 4 ingredients.  Combine in a medium glass bowl with the mayonnaise and salsa.

Roll in a tortilla, on cocktail rye bread for tiny open faced sandwiches, or on a bed of chopped mixed greens. .😊. .Lin
