3# pork tenderloin
4 lg. cloves garlic
1 med. purple onion
coarse garlic sea salt
fresh ground black pepper
1-2T butter / oil
1 15oz. can of corn
Before freezing, I cut a pork tenderloin into 1# medallions. I used 6 here, quickly brought to 'popsicle' stage, on my Miracle Thaw. (This link is just a nice visual reference. You can find them much cheaper on eBay.) Cut the meat into chunks and combine with the other ingredients in that group. Sizzle and stir long enough to cook everything the way you like.
My Granddaughter called just a short time before dinner to see if she could come over to catch up on one another's lives. I love having things like this ready to cook on the spur of the moment.
As much as we both love fresh vegetables, we also like frozen and canned. I put these in this divided dish, added a dab of butter to the corn half, covered with a paper towel and heated in the microwave.
