A Shrimp Dinner Bowl


Shrimp, Sweet Potatoes and Broccoli — 300-325 calories
This needs little prep time or cooking. It's ready super quick! Scrub and slice a 5" Sweet potato. Thaw 6 large shrimp and remove any shell. Wash and cut some broccoli florets using about a cup. Start with the sweet potato in a small pan with a little water and butter. Season well and bring to a simmer. Cover and cook just a few minutes. Add the shrimp either whole, or cut into 3 pieces each. Steam the shrimp only a couple minutes before adding the broccoli. Cook 4 minutes longer. . .Lin
