Chicken, Rice and Vegetables


Today begins a focused effort to use up much of the ingredients occupying my freezer!  I only have the freezer in my side-by-side 'fridge, and it's totally packed.

I was going to have a freezer my daughter isn't using, moved here, but then realized, even for the amount of cooking I do, since I don't hunt, butcher and freeze venison, or buy sides of butchered, frozen animals, this should be more than enough space for me.


I thawed 6 chicken legs, skinned-seasoned and fried those in Moroccan EVOO. In a big casserole dish, I combined a pound of thawed vegetables and garlic I roasted in the fall, with a little Jasmine saffron rice. Chicken on the top, now all chilling in the 'fridge. Later I'll bake it at 350° for a half hour or so and it'll be dinner for a couple nights. Sometimes we need to look at things differently. "More" is not always better!
