Quick Turkey and Vegetables



2T EVOO
1 med. zucchini
2 mini peppers
3 baby red potatoes
10oz. cooked turkey in 1c bone broth 


Wash, slice-chop the vegetables into a pan with the hot EVOO. Stir-fry until crisp-tender. Stir in the turkey, continue to sauté, absorbing about half the liquid and lightly browning everything.


This made 2 nice servings and goes well with fresh, buttery croissants. . .Lin
