Millie's Christmas Fudge

Technically, this is Eagle Brand sweetened condensed milk's famous fudge. However my sweet Mother-In-Law always made this, so I'm posting it here, named after her.

We're having a big family gathering tonight, for Christmas Eve, and a smaller immediate family get together Christmas Day. This year our Christmas Day celebration is at my daughter's. She and the rest of us, love having our traditional 'Thanksgiving Dinner' menu again for Christmas. So we'll have turkey, stuffing, gravy, mashed potatoes, green bean casserole and my Mom's cranberry and the Swedish version, a jar of Lingonberry preserves. Additionally, I wanted to make Joann's Danish Cabbage, another family favorite, and Millie's Christmas Fudge.  I'd also love to make my baked sweet potatoes, but our oven space is limited, so that might get scratched.

This recipe is so simple. For our big gatherings, I doubled this recipe today.

18oz. (1½ packages) semi-sweet chocolate chips
1 14oz. can Eagle sweetened condensed milk
1/2T real Mexican vanilla
1/4t salt
3/4c chopped walnuts or pecans - optional


Pour some of the condensed milk into a glass container, add the chips, salt and vanilla then the remaining condensed milk. Heat it carefully on the stove, or in the microwave. I melted all this in the microwave, at 50% power, for 2 minutes at a time, stirring after each heating.


Once everything is warm and melty enough, combine it well, pour and spread it into buttered or sprayed, glass pan(s) and chill several hours, or overnight, before cutting and plating. If you're a chocolate or fudge lover, I think you'll love this super easy, smooth, creamy fudge.

You can also make wonderful hot fudge sauce by cutting back on the chips. This is just amazing, slightly warmed, on Vanilla Bean Ice Cream!

12oz. semi-sweet chocolate chips
1 14oz. can Eagle Brand sweetened condensed milk
1t Mexican vanilla
a pinch of salt
