Cranberry-Orange-Pecan Muffins

In a big glass bowl, whisk together the dry ingredients:

1c corn flour
2c all purpose flour
1T pumpkin pie spice
1t baking powder
1t baking soda
1t salt
1-1/2c chopped pecans


In a smaller bowl, whisk together:

3 lg. eggs
1T Mexican vanilla
1-1/4c brown sugar
3/4c single source EVOO
3/4c Chobani plain full fat Greek yogurt


When the egg mixture is smooth, stir in the fruit:

2-1/2T finely chopped mandarin orange peel
1c chopped mandarin orange segments
1c chopped frozen or fresh cranberries

Pour the egg and fruit mixture into the bowl of dry ingredients. Mix with a silicone spatula, being careful not to over-mix  Spoon into paper lined muffin tins and bake at 350° for 20-25 minutes. Mmmm your house will smell like a bakery 😃 . . . Lin
