Cranberry-Orange Healthy Nut Muffins
Just-About-Everything Healthy Muffins
1/2c raisins
Preheat the oven to 375°
Combine the wet and dry ingredients until totally incorporated, with a heavy silicone spatula. Fill the paper-lined muffin cups 3/4 full. Bake 18-20 minutes until golden brown and they pass the toothpick test.
Today it's just me, but tomorrow these will go with me to my Tuesday morning Bible study. These turned out so well and are a healthy snack. . .Lin
Cranberry-Orange-Pecan Muffins
When the egg mixture is smooth, stir in the fruit:
Pour the egg and fruit mixture into the bowl of dry ingredients. Mix with a silicone spatula, being careful not to over-mix Spoon into paper lined muffin tins and bake at 350° for 20-25 minutes. Mmmm your house will smell like a bakery 😃 . . . Lin
Cranberry-Rhubarb-Walnut Muffins
When these are well combined, add the dry ingredients:
Mix well with a big wooden spoon or silicone spatula, then spoon into paper lined muffin tins. Bake about 20 minutes until they spring back when touched in the center, or pass the 'toothpick test.' Makes 24 muffins. These are great for breakfast or an anytime-snack. . .Lin
Cranberry Orange Banana Walnut Cake-Bread
Preheat the oven to 350° Butter and sugar a 8"x12"x2" glass baking pan with turbinado or coconut sugar.
Whisk all the dry ingredients together in a big glass bowl.

These are 3-4 times bigger than those you'll find in the grocery store. Those look like orange grape tomatoes. The big ones have seeds, the little ones won't. Either buy or pick some if you have access to a tree. At first, about a month ago, I had many orange ones. Since I live in Minnesota, the tree doesn't get enough sun this time of the year. Mine aren't totally ripe but were really good anyway!
Spray them with a 50/50 solution of white vinegar and warm water. Scrub, rinse well, then let them dry.
This is great over vanilla ice cream or served with fish, pork, turkey or chicken. . .Lin
Cranberry-Orange Waldorf Relish
Using a food processor, grind up the cranberries, apple and oranges. You may need to peel the apple for it to grind up well. Transfer to a medium bowl and stir in the sugar and pepper. Next, either process or finely chop the celery and walnuts then add to the bowl. Make this at least several hours beforehand, or the day before, to blend the flavors. . .Lin
