Mediterranean (Chicken) Pasta Salad

1 med. onion – chopped
1 clove of garlic – minced
3 stalks of celery – chopped
1 can hearts of palm – sliced
1 can small artichoke hearts – halved
4oz. capers, drained
6oz. red (kalamata) olives
1 pkg. grape tomatoes – halved
1 can black or garbanzo beans - drained-rinsed
1 cooked chicken breast - optional
1 recipe Lemon-Oil Dressing *
8oz. dry pasta – cook according to directions
salt, pepper, Italian seasonings to taste

Combine all the ingredients. Toss, chill for several hours. Toss again, taste to see if more seasonings are needed. Makes a lot of servings. . .Lin
